A little water turns the spices into a coating sauce instead of leaving them dry on the meat. Simmer until the filling is moist but no longer watery, which helps the shells stay crisp. Set out the toppings separately for easy assembly. This recipe makes eight tacos, with two counted as a serving.

Ingredients
Step-by-step instructions
- Cook beef and onion in a large skillet over medium-high heat for 7 to 8 minutes, breaking up the meat, until beef reaches 160°F (71°C). Drain excess fat carefully.
- Stir in chili powder, cumin, paprika, garlic powder, and salt. Cook for 30 seconds, then add water.
- Simmer over medium-low heat for 5 minutes, stirring, until the liquid reduces to a light coating on the beef.
- Warm taco shells according to their package directions while the filling simmers.
- Divide beef among shells. Add lettuce, tomato, cheddar, and sour cream just before eating so the shells stay crisp.

- Fill shells at the table instead of letting assembled tacos sit.
