Slicing beef across the grain shortens its fibers and makes each bite easier to chew. A brief cornstarch marinade helps the sauce cling, while cooking the beef in two batches preserves browning. Steam the broccoli briefly before combining it with the meat. Resting time includes ten minutes of marinating and a three-minute rest after cooking.

- Toss beef with 1 tablespoon soy sauce and 1 tablespoon cornstarch. Let stand for 10 minutes. Mix remaining soy sauce and cornstarch with oyster sauce, sugar, and 1/2 cup water.
- Steam broccoli in a covered skillet with remaining water for 3 minutes. Transfer broccoli out and wipe the skillet dry.
- Heat oil over medium-high heat. Cook beef in two batches for 2 to 3 minutes each; transfer to a clean plate.
