This Moroccan-inspired couscous uses the quick-cooking supermarket variety for an approachable weekday meal. It is a shortcut from traditional steamed couscous, with vegetables and chickpeas cooked in the same pot before the grains hydrate. A little cinnamon and a handful of raisins give gentle sweetness. Have everything chopped before starting, and keep the lid closed during resting. Four substantial portions need only a fresh salad alongside.

Step-by-step instructions
- Heat oil in a wide pot over medium heat. Cook onion and carrots for 8 minutes, stirring regularly.
- Add zucchini, cumin, cinnamon, and salt. Cook for 5 minutes until the zucchini begins softening.
- Stir in chickpeas, raisins, and broth. Bring to a boil and simmer for 3 minutes until carrots are tender.
- Stir in couscous, cover tightly, and remove from heat. Rest for 5 minutes without lifting the lid.
- Fluff gently with a fork and fold in parsley. Serve four bowls; reheat saved portions to 165°F (74°C).
