Borscht has many household variations, and this vegetable version introduces the beet-and-cabbage style associated with Ukraine. Grated beets cook faster than large chunks and color the broth beautifully. Potatoes add substance, while vinegar balances the natural sweetness. Vegetable broth keeps the pot plant-based. Make six generous bowls, give the soup a brief rest, and bring bread to the table for dinner.
