Biryani rewards careful layering and gentle heat. Rinsing and soaking the rice helps it cook evenly, while a brief boil leaves the grains firm enough for steaming. The vegetables should be nearly tender before the rice goes on top. Resting time includes twenty minutes of soaking and ten minutes after the covered cooking stage.
