Holy basil is traditional for pad kra pao; Thai basil gives this accessible version a sweeter, anise-like aroma. Ground chicken cooks quickly and takes up the sauce easily. Have every ingredient ready before heating the skillet, and keep the basil for the final stir so its leaves stay fragrant. Adjust the chilies to your household's preference.

Ingredients

Step-by-step instructions

  1. Mix oyster sauce, soy sauce, fish sauce, sugar, and water in a small bowl. Remove any tough stems from the basil.
  2. Heat oil in a large skillet over medium-high heat. Add garlic and chilies; stir for 30 seconds, just until fragrant.
  3. Add chicken and green beans. Cook for 7 to 8 minutes, breaking chicken into small pieces, until the beans are tender-crisp and chicken reaches 165°F (74°C).
  4. Pour in the sauce and toss for 2 minutes, until it coats the chicken and little liquid remains in the pan.
  5. Turn off the heat, fold in basil until wilted, and serve immediately.

A few kitchen notes

  • Use a wide skillet so the chicken browns instead of steaming.

Ingredient substitutions

  • Use one mild jalapeño instead of the Thai chilies for gentler heat.

Storage & reheating

Refrigerate within 2 hours for 3 days. Reheat to 165°F (74°C), adding a little water if needed.

What to serve with it

Serve over jasmine rice with sliced cucumber.
