Chicken yassa pairs bright citrus with onions cooked until sweet and silky. This stovetop version uses bone-in thighs and a short refrigerated marinade that fits a home schedule. The onions and marinade cook thoroughly with the chicken, so the finished sauce stays flavorful. Resting time includes one hour of marinating and five minutes before serving.
