A skillet cannot reproduce a tandoor, but it gives this home naan browned spots and a tender interior. Yogurt enriches the dough and helps it stay supple. Roll each piece just before cooking so it remains easy to lift. Rising time assumes a warm room; allow longer if the dough has not become visibly puffy.

Ingredients
Step-by-step instructions
- Mix 2 cups flour with yeast, sugar, and salt. Stir in yogurt, water, and oil. Knead for 6 minutes, using a little reserved flour only if needed.
- Cover and rise for 60 minutes, until puffy and nearly doubled. Divide into six balls, cover, and rest 10 minutes.
- Heat a dry heavy skillet over medium-high heat. Roll one ball on a lightly floured surface into a thin oval about 7 inches (18 cm) long.
- Cook for 1 to 2 minutes until bubbles appear and the underside browns. Flip and cook another minute, until no raw dough remains.
- Repeat with remaining dough. Brush warm naan with melted butter and wrap in a clean towel.
A few kitchen notes
- Brush excess flour away before placing bread in the skillet.
Ingredient substitutions
- Use melted ghee instead of butter in the same quantity.
