Choose avocados that yield gently when pressed without feeling hollow or mushy. This guacamole leaves small pieces of avocado intact for a satisfying texture. Finely chopped onion and jalapeño spread their flavor through the dip without overwhelming individual bites. Make it close to serving time, when the color and cilantro aroma are at their best.

Ingredients
Step-by-step instructions
- Cut avocados lengthwise around their pits. Twist apart and lift out the pits with a spoon. Scoop the flesh into a broad mixing bowl, discarding any bruised sections.
- Add lime juice and salt. Mash with a fork until creamy in places while leaving some small chunks for texture.
- Fold in onion, cilantro, and jalapeño. Scrape the sides and bottom of the bowl so the seasonings are evenly distributed without overmixing the avocado.
- Spoon into a serving bowl and smooth the surface gently. Serve promptly, or press a reusable food cover directly against the surface and refrigerate until needed.
A few kitchen notes
- Chop the onion very finely to avoid harsh, large pieces.
Ingredient substitutions
- Use finely chopped serrano instead of jalapeño for more heat.
Storage & reheating
Refrigerate promptly with a cover touching the surface for up to 1 day. Some browning is normal.
What to serve with it
Serve with tortilla chips, tacos, or roasted sweet potatoes.
