Chana masala has many regional and household variations. This simplified version uses canned chickpeas and widely available ground spices, keeping the ingredient list manageable for an American supermarket. Softening the onion before adding tomatoes builds a balanced sauce, and lemon juice supplies brightness at the end. The chickpeas should be tender and coated rather than swimming in liquid. Four portions work well with rice or flatbread for an everyday meatless dinner.

Ingredients

Step-by-step instructions

  1. Heat oil in a saucepan over medium heat. Cook the onion for 7 minutes, stirring until softened and lightly golden.
  2. Add garlic and ginger; cook for 1 minute. Stir in cumin, coriander, and turmeric and cook for 30 seconds.
  3. Add tomatoes, chickpeas, measured water, and salt. Bring to a simmer, then cook uncovered for 15 minutes, stirring occasionally.
  4. Mash a few chickpeas against the pan to thicken the sauce. Stir in garam masala and lemon juice and heat for 1 minute.
  5. Divide among four bowls and serve hot. Refrigerate any saved portions promptly at 40°F (4°C) or below.

A few kitchen notes

  • Cook the onion fully before adding acidic tomatoes.
  • Mash only a few chickpeas to keep plenty of texture.

Ingredient substitutions

  • Replace crushed tomatoes with the same quantity of canned diced tomatoes, crushing them with a spoon.
