Pol sambol is a Sri Lankan coconut accompaniment with a lively balance of heat and acidity. This supermarket-friendly adaptation moistens dried unsweetened coconut and leaves out the dried fish used in some versions. It will taste and feel different from freshly grated coconut, but it is a practical starting point. Mince the onion finely and work the spices through the coconut thoroughly. A small spoonful beside rice or curry adds brightness without becoming the main dish.

Ingredients

Step-by-step instructions

  1. Put coconut in a mixing bowl, sprinkle with the measured warm water, and toss thoroughly to moisten all the shreds.
  2. Cover and let stand for 10 minutes so the coconut softens. Break apart any clumps with a fork.
  3. Add onion, paprika, cayenne, and salt. Rub together with clean fingertips or mash with a spoon until evenly colored.
  4. Add lime juice and mix firmly for another minute, distributing the onion and squeezing moisture through the coconut.
  5. Transfer to a small serving bowl and offer in modest portions. Refrigerate at 40°F (4°C) or below if not serving immediately.

A few kitchen notes

  • Avoid sweetened baking coconut, which changes the flavor considerably.
  • Use fine shreds instead of large coconut flakes.

Ingredient substitutions

  • Replace lime juice with the same amount of lemon juice.

Storage & reheating

Refrigerate in a sealed container within 2 hours and use within 2 days. Freezing is not recommended for the best onion texture.

What to serve with it

Serve with rice, dal, or a mild coconut curry.
