Cold cooked rice has a drier surface that fries more readily than freshly steamed rice. Use rice that was cooled promptly in shallow containers and refrigerated within two hours. Break apart clumps before cooking so the pan can heat every grain. Cook the chicken and eggs separately, then combine them with the vegetables and rice.
