The sticky dough develops structure during its rise, so a spoon and an oiled pan handle most of the work. Olive oil helps the underside crisp and keeps your fingers from sticking during dimpling. Rising times assume a warm kitchen. Wait until the dough looks puffy before baking; the clock is a guide to its progress.

Ingredients
Step-by-step instructions
- Stir flour, yeast, and fine salt together. Add water and 1 tablespoon oil; mix until no dry flour remains. Cover and rise for 2 hours, until doubled.
- Coat a 9-by-13-inch (23-by-33 cm) metal pan with 2 tablespoons oil. Fold dough over itself four times with an oiled spatula, then transfer to the pan.
- Gently stretch toward the corners. Cover and rise for 45 minutes, until puffy. Heat oven to 425°F (220°C).
- Drizzle remaining oil over dough. Dimple deeply with your fingertips, then scatter rosemary and flaky salt.
- Bake for 22 to 25 minutes, until golden on top and underneath. Transfer to a rack and cool 15 minutes.
A few kitchen notes
- If dough resists stretching, pause for a few minutes before continuing.

- Use chopped thyme instead of rosemary in the same quantity.
